Better than Benedict!
If you love eggs Benedict, it's worth tackling Julia Child's extremely elevated version: the Tournedos Henry IV! Although she doesn't make the comparison, it's easy to see it's indeed a version of eggs Benedict that's more fit for a king: a large, crusty butter-sautéed croûton replaces the English muffin, a bacon-wrapped tenderloin medallion with its jus replaces the traditional ham slice, an artichoke bottom cooked in butter replaces the softness of the poached egg, and béarnaise replaces the hollandaise.
